This salad is so good! Lately at work, I start to bonk in the afternoon. I find myself running home in search of protein. This salad has really helped sustain me. It comes out to 5 pts for the whole thing.
1 cup canned garbanzo beans - drained and rinsed
1 medium diced tomato
1 teaspoon olive oil
2 tablespoons chopped fresh basil
2 tablespoons finely chopped red onion
juice from 1/8 lemon
Add together all of the ingredients and salt and pepper to taste. This is my new favorite recipe. I love it!
