I woke up this morning and headed over to the local Farmer's Market. Today, I was determined to have veggies for breakfast. I wasn't sure what I was going to make, but decided to let the available produce decide for me. I was inspired to create and Asian Potato Salad on a bed of freshly steamed spinach.
