Recipe for "Tucson Omelet"


I named this recipe the "Tucson Omelet" because it seems like whenever I go to visit and eat out, somehow sprouts are involved. They love to put sprouts on sandwiches, omelets, and even crepes.

1 egg plus 2 egg whites
1/4 cup sliced red onion
1/4 cup spinach leaves
1/4 cup sprouts
1 tablespoon chopped cilantro or basil
1 oz. goat cheese

Directions: Cook the eggs, add the rest of the ingredients to the middle =-)
