I know I posted a very similar dinner a few weeks ago, but I had to add this one as well. I absolutely love it!
Quinoa (4 pts for 1 cup) This takes 15 minutes to make.
Trader Joe's Mahi Mahi - (I love this stuff) - Depending on the weight, it is usually 6 to 7 pts per person for 2 people.
Fresh spinach steamed - add a pinch of salt
Fresh tomatoes - sliced
This dinner tastes like it took forever to make, but it only took 15 minutes total.
